The Pedro Ximénez is a white grape variety that grows in several Spanish wine regions.

Where is Pedro Ximenez grape wine made?

It is the main grape of the Denomination of Origin Montilla-Moriles, in the province of Córdoba.

Variety of white grapes extended by the south of Spain. In the DO Montilla-Moriles it can be considered, after about 500 years of cultivation, autochthonous variety. Its high content of sugars and low acidity makes it the grape par excellence, together with Moscatell, to make sweet wines.

It is a vigorous strain, good producer, that tolerates heat well and appreciates high sunstrokes. It is sensitive to powdery mildew and, in adverse conditions of precipitation, by the appearance of botrytis and mildew. A late harvest is made by entering the berry in the phase of pasificación. The ripening cycle of the berry is short.

The strain has an upright carriage. The bunches are large and not very compact. The berries are spherical, medium to small in size, yellow-green and thick skin. The must has a very high content of sugars and a low acidity.
