The Pago de Cirsus winery
The wines produced by this winery aim to make wines with a maximum level. The terrain, microclimate and varieties that are grown here give the wines a distinctive character from the rest of the wines in the area. All Pago de Cirsus wines are made with grapes from the estate they own and the entire production and bottling process takes place on the estate itself.
To do this, they have modern and functional facilities that allow them to set a very high level of demand, respecting the raw materials to the maximum. The winery is located in the highest part of the estate, from where a large part of the vineyard can be seen. The cellar area is half underground, which allows it to maintain more stable temperature and humidity conditions throughout the year.
The harvest takes place at the end of August and the beginning of September. The white varieties are the earliest and harvest at night, when temperatures are cooler and sheltered from the night; This is how we prevent this delicate grape from losing its qualities and oxidizing in daylight. To determine the harvest date, we carry out continuous maturation controls, dividing the farm into plots in order to collect each plot that makes up the farm at its optimum moment of maturity.
This winery also has its own hotel and various activities to learn more about the world of wine.
