Elaboration of the Freixenet Vintage Reserva cava

The musts, after standing for one or two days, are transferred to different fermentation tanks.
The sowing of selected yeasts is carried out in them and then a first fermentation is carried out in stainless steel tanks at a controlled temperature of 12º for between 10 and 15 days.
After a few racks and treatments the coupage is performed. Freixenet Vintage Reserva is then bottled.
Freixenet Vintage Reserva is ultimately bred in the bottle for more than 15 months.

What type of cellar is Freixenet Vintage Reserva 

Coupage of Macabeo and Parellada grapes. Only the must flower of the grapes is used, which is achieved without the application of any type of pressing.

Designation of Origin of Freixenet Vintage Reserva 

Belonging to sparkling cava wines. The largest production of these sparkling wines is found in Alto Pendes, but we can also find large cavas in the Aragon region.
Sparkling cava wines are made in Spain. The region best known for making cavas is Sant Sadurní d´Anoia, within the Alto Penedés region. From this region most of the national production of cava is obtained.

Varieties of grapes used in Freixenet Vintage Reserva 

Varieties: Macabeo and Parellada.
The Macabeo variety is harvested during the first half of September. La Parellada, in October. The harvest is done manually in containers or boxes of 25 kilos of capacity.
