Elaboration Fragantia syrah 

The grapes are directly selected in our vineyard when they reach the optimum moment of maturation, thus managing to preserve the soul of strawberries, violets and flowers with sweet and fruity touches so characteristic of Syrah. We carry out nocturnal harvest in the month of September, looking for the coolest moment of the night, in turn, the grapes are submerged in carbonic snow from the collection until the moment of pressing. To extract all the aromas contained in the skins, we made a pre-fermentative cold maceration at 5ºC for 5 hours. Proceed then, to a gentle pressing, extracting only the must flower. The process ends naturally when the perfect balance between acidity, alcohol content and sugar has been found. The wine is stored at 0ºC until the moment of bottling, in order to preserve all the natural carbon coming from the fermentation.

The winery Finca Constancia 

Finca Constancia is an avant-garde winery, perfectly integrated into the landscape, where the protagonist is the vineyard. Designed by the architect Gonzalo Tello, it has been conceived to work efficiently in it, while integrating into the landscape where it is located, with cutting-edge technology.
Visually it is divided into three modules perfectly differentiated by the materials they use and which are a faithful reflection of the phases of the winemaking process: the stainless steel wing that houses the fermentation tanks, the glass where the bottling plant is located and the wood that the barrel room collects, this room has a capacity for 1500 barrels with an average life of 5 years.
The design of the vineyard and the winery allows to control the traceability of the wines by the origin of the grapes of each plot. In this way, the quality of the grapes can be assessed according to the different treatments carried out, as well as experimenting with various cultivation and processing techniques. They are always harvested and processed each variety separately, as they reach the optimum degree of maturity.
In the underground nursery, there are 1200 oak barrels resting on metal sleepers at three heights.
For its part, the social area of ??the winery, focused on wine tourism, has a store, recreation rooms and meetings overlooking the vineyard, as well as a room integrated into the barrel house.

The Denomination of V.T Castilla-La Mancha 

The denomination Castilla-la Mancha is the largest extension of vineyards in Spain. Within it you can find the following names:
DO. Almansa, D.O. Jumilla, D.O Manchuela, D.O. Ribera del Júcar, D.O. Uclés, D.O, DO Valdepeñas D.O. Mondéjar D.O. Méntrida and D.O. The Stain. DO Jumilla.
