Winemaking Alquezar Blanco 

Winemaking Deposits: Stainless steel.
Fermentation: Controlled temperature at 17ºC to enhance the varietal character.
Time: 10 days.
Production process: After a cold maceration of the must with the skins for 2 hours at a temperature of 10ºC, it ferments, once clean, at temperatures of 17ºC for approximately 1 day to develop and save the maximum aromas. We stop the fermentation by cold and filtration so that there are a few grams of sugars without fermentation.

The vineyard land of the Somontano Designation of Origin has three different areas: the mountains, the Somontano and the plains. Its total extension is 200,000 hectares of surface of which about 100,000 are cultivated. Of the latter, 4,400 hectares are dedicated exclusively to the vineyard.
Somontano wines have grape varieties from more than 4,400 hectares of plantation. They are the base from which their good Somontano wines are born: Cabernet-Sauvignon, Merlot, Tempranillo, Syrah, Garnacha Tinta, Moristel, Parraleta, Pinot Noir, Chardonnay, Macabeo, Sauvignon Blanc, Garnacha Blanca, Riesling or Alcañón are some of them .
Somontano is characterized by having cold winters and hot summers with significant temperature changes in late spring and autumn. The annual average temperature is 11 degrees centigrade.
