Winemaking Allende

Vault of destemmed and not crushed bunches in a stainless steel tank. Pre-fermentative cold maceration at 5º C for 6 days. Controlled fermentation at 28º C for 10 days, with three daily pump-overs. Total maceration with the skins for 16 days. Discover by gravity and vertical pressing. Malolactic in Stainless.
