Elaborated from the bleeding of syrah grape musts
Later they are clarified by gravity during two days and progressively incorporated to the continuous fermentation that is carried out at 15ºC over a month. Once the fermentation is finished, a transfer is made to separate the thick lees and to be able to carry out aging on fine lees in stainless steel tanks. The movement of lees is manual, with the aim of conserving the natural CO2 originated in the fermentation, which brings freshness to the wine. Two weeks before bottling, this removed is stopped so that the wine clarifies statically and can be bottled.

The vineyard terrain of the Somontano Designation of Origin has three distinct zones: the sierras, the Somontano and the plains. Its total area is 200,000 hectares of land of which about 100,000 are cultivated. Of the latter, 4,400 hectares are dedicated exclusively to the vineyard.
