In the mouth, the effervescence is present, but caressing with a creamy texture that manifests, once again, that balance between the vibrant acidity of youth and the elegant envelope of maturity. Elaboration Vivanco Cuvée Inédita Reserva Extra Brut
The extraction of the must is smooth and delicate, with a low yield in order to obtain pure, fruity musts that respect the terroir as much as possible. The musts obtained from each variety carry out a first alcoholic fermentation separately in small stainless steel tanks at a controlled low temperature. Once the fermentation is finished and after some time on its lees, they are racked and the selected mixture, or cuvée, of the monovarietal white base wines is made in the proportion indicated above. This blanc de blancs will rest until January, the date on which the tirage is carried out and with it the second fermentation in the bottle, characteristic of the traditional or Champenoise method.

The bottles are kept in rhyme in the natural coolness of the cellar's underground cellars for 30 months, in contact with its lees, where harmony, complexity and depth of aromas, textures and fine effervescence will be acquired.
The Vivanco winery
Bodegas Vivanco is located in Briones, a privileged enclave of La Rioja Alta, in the foothills of the Sierra de Cantabria and on the banks of the Ebro River. An area with a mild microclimate and extraordinary clay-calcareous soils.
Around the winery we find the Finca El Cantillo, which gets its name from the amount of boulders on the ground. Tempranillo is the fundamental variety, but not the only one. In this vineyard we can also find other varieties that we use in our wines: Graciano, Garnacha, Mazuelo, Viura, Malvasia, etc.
The underground cellar is functional and aesthetic. The building was carried out underground with the aim of eliminating the least possible part of the vineyard and to minimize the environmental impact in favor of landscape conservation. By making the cellar underground, it was also possible to favor naturally balanced temperature and humidity conditions throughout the year, essential for the good conservation and aging of the wine in barrels or in oak vats.

Located in the DO Rioja, a denomination that dates from the end of the 19th century, but which was not officially formed until 1925.

Our own 42-hectare vineyard located on a gentle slope at more than 500 meters above sea level in Briones, Rioja Alta. Flanked to the north by the Sierra de Cantabria and to the south by the Sierra de la Demanda, it owes its name to the nearby Hermitage of La Concepción, from the s. XVI. A unique and pioneering vineyard in Rioja for exclusively cultivating a collection of all the different white varieties authorized by the denomination. Enjoy the best conditions for growing these grapes: a clear Atlantic climatic influence, as well as its fresh, deep, clay-lime soils, which give the grapes slow ripening and balanced sugars, lively acidity, varietal aromas and fine minerality. .
The different grape varieties were harvested by hand in small containers, separately and at their optimum moment, according to grape tasting and analysis, between the first and second week of September.
