Elaboration of Tarima Monastrell 

Traditional viticulture with minimal intervention. Late harvest from the second half of October. Native yeasts, tank fermentation, malolactic tank fermentation and aging in used French barrels (in the previous Tarima Hill vintage) for 6 months.

The differential seal of Bodegas Volver is a modern cut where native varieties are mainly worked such as: Monastrell, Tempranillo, Merseguera, Macabeo, Moscatel, etc.

Denomination of Origin of Tarima Monastrell 

The origin of Alicante wine is within the legends and fables, which surround the historical roots of the wines of all regions.
In our province, it was the Iberians who began to cultivate the vine for family use, although it previously existed in the wild. Possibly it was the Phoenicians who introduced the vine to us in the first half of the first millennium before Jesus Christ. The Romans were great growers of this fruit.
The archaeological remains, especially in the Marquesado area, confirm the presence of wine amphoras and large "Villae", destined for vine farming, and there have even been remains of a factory of amphorae of this type. There is very vague news of our wines in the late Middle Ages, and it seems that even the vineyards and their production are plunged into a dark and deep well, typical for another part of this era.
Curiously, the first written news comes to us from Arab poets who sing in their verses the excellence of those wines, and in the “Repartiment” book there are already sections in which donations of vineyards are granted in various towns in the province. But it is from the fifteenth century when our wines truly enter into documented history.

Multiple vineyards located between the Sierras de Salinas, Umbría and La Sima, with an altitude of 600 - 750 meters. Limestone soils with little capacity to retain water, covered with stones forming a platform at the foot of the mountain, thus avoiding erosion and acclimating the soil especially in summer
