Elaboration of Pazo San Mauro
Vintage by hand. Selection in vineyard of the grapes. Various forms of winemaking to obtain maximum expressiveness and complexity, one part of the grape is destemmed to then macerate at low temperature (11ºC) and the other is vinified by whole clusters of well-lignified stems. The Marques de Vargas winery
Located in Salvaterra do Miño, on the banks of the river, is the Pazo that presides over the estate and gives its name to the winery. In 2003, Bodegas y Viñedos del Marqués de Vargas acquired this historic 30-hectare country house in Rías Baixas, in the chosen sub-denomination of Tea County.
The Pazo de San Mauro, originally owned by the noble Spanish-Portuguese family of Pereira de Castro, descendants of King Sancho I of Portugal, was built in 1591. The cultivation of the vineyard was always linked to its history, as the remains of the old winery that can be seen in its construction testify, attesting that wine was already made in the 16th century.
Since its acquisition, large investments have been made in it, both in the restoration of its noble buildings and in the construction of a new winery equipped with the latest technology for optimal winemaking.
Denomination of Origin of Pazo San Mauro
Rías Baixas is a designation of origin belonging to the region of Galicia. Specifically, it forms the coastal part of a part of Galicia, concerning the province of La Coruña, the province of Pontevedra to the Vigo estuary.
The Albariño grape variety has been cultivated in these lands for more than 1000 years, and the existence of Albariños wines has been known since the 12th century. Bo octante is from the mid-twentieth century, when this variety extends throughout the territory.
In the 80s, the Rias Baixas Regulatory Council and the Rias Baixas Designation of Origin were created.
