The Winery Pago de Cirsus & Bodega Zifar
The wines produced by this winery aim to make wines with a maximum level. The terrain, microclimate and varieties grown here give the wines a distinctive character from the rest of the wines of the area. All Pago de Cirsus wines are made with grapes from the estate and the whole process of production and bottling takes place on the farm itself.
For this, they have modern and functional facilities that allow to put a level of demand at very high levels, respecting the maximum raw materials. The winery is located on the highest part of the estate, from where you can see much of the vineyard, the area of ??the winery is half underground which allows maintaining more stable temperature and humidity throughout the year.
The harvest takes place at the end of August and the first days of September. The white varieties are the earliest and their harvest is nocturnal, when the temperatures are cooler and sheltered at night; thus we avoid that this delicate grape loses its qualities and rusts with the light of day. For the determination of the harvest date, we carry out continuous ripening controls, dividing the farm into plots in order to collect each plot that makes up the farm at its optimum moment of maturity.
