- TASTING NOTES: A bright, golden yellow white wine of medium intensity, medium density and glyceric tears. Very clean. On the nose it is aromatic with a medium-high intensity. The wine is in a moment of youth and reflects this through very fresh aromas of lychee, grape and pear, and also with marked floral aromas, especially roses and acacia flowers, very typical of the variety. After this first impression, hints of peach and banana appear, as well as aromas of green olives and rosemary. It is a very spicy wine, with hints of white pepper, cardamom and cumin. On the palate it is dry, with medium acidity, medium body and well-integrated alcohol. The palate is tasty and very fresh. In the retronasal, the aromas of lychees and rose are reinforced, with a light touch of white pepper and curry (turmeric). The final taste is long and spicy, of medium-high complexity, with a characteristic bitter taste that remains and reflects the purity of the variety.

Production of Kolenda Gewurztraminer wine
To avoid excessive oxidation and to cool the grapes, dry ice is used during the journey from the tractors to the winery. Once in the winery, after destemming and gently crushing the grapes, a skin maceration is carried out at a low temperature of 8ºC for 12 hours.
Fermentation takes place in stainless steel tanks for 12 days at a constant temperature of between 14-16ºC. Once alcoholic fermentation has concluded, the wine remains on its own lees for a minimum of 4 months, during which time batonnages are carried out weekly. The wine is then clarified and filtered, respecting the virtues of the wine as much as possible, and is then bottled.

The V.T. region of Bajo Aragón is one of the regions with the most tradition in winemaking in Spain.
It has ideal geographical and climatic conditions for the vine and is one of the largest. It brings together regions of Teruel such as Bajo Aragón, Maestrazgo and Matarraña, as well as the surroundings of the Zaragoza municipalities of Caspe, Mequinenza, Fabara and Maella, among others. It has a varietal catalogue that includes grapes such as Macabeo, Garnacha tinta and blanca, Mazuela, Tempranillo, Cabernet and Syrah. Recent years have seen a considerable rise in its wines.
