Wine making Gabarda I
Pre-fermentative cold maceration for five days at a temperature of 8ºC. The fermentation takes place in stainless steel tanks of 20,000 liters at a low temperature, of each variety separately, in order to safeguard all the aromatic identity of the varieties.
