Elaboration of Aster Crianza

After passing through the selection table, a gentle destemming and crushing, and a few days of pre-fermentation maceration, the grapes were transferred to the tanks where the alcoholic fermentation was carried out. After 16 days of fermentation, the wine made the malolactic in French oak barrels with weekly battonages

What kind of wine is Aster Crianza 

The aging was carried out for 22 months in new French oak barrels (70%) and the rest, in French oak, of two wines. Three racking was done by the traditional method.

The winery Aster 

The winery was born in 1990. The Áster facilities were built in 2002 with a timeless and elegant aesthetic. The manor house, open to wine tourism, is naturally integrated into the facilities of the winery where the elaboration room stands out, a diaphanous nave, from which the vineyard can be seen, and with a point of visual attraction: several rows with the mouths of stainless steel tanks.
Here is located, in time of harvests, the selection table through which all bunches pass before starting your 'trip' through a winery equipped with the highest technology. The barrel nave, with capacity for 4,000 units, is another attraction for the visitor.
At present, 2,700 French oak barrels are stored in this cabin, sheltered from the outside, in which the wines destined for Áster Finca El Otero and Áster Crianza are bred before being rounded off in the silent wine racks.

Denomination of origin of Aster Crianza 

Ribera del Duero, a denomination located in Castilla y León, along the Douro river. It occupies the provinces of Valladolid, Burgos, Segovia and Soria.

Variety of grapes used in the wine Aster Crianza 

100% Tinta del Pais from our plots Fuentecojo, Otero Joven and La Cueva that surround the winery in Anguix (Burgos), located in loam-silty soils and with an altitude close to 780 meters. We harvest the grapes manually in the early morning, when the temperatures are lower, cutting only the bunches in perfect state of maturation and health and maintaining the integrity of the beans until they enter the winery in small boxes of 20 kg.
