Special characteristics of the wine:
The Garnacha variety ferments in stainless steel tanks. Cariñena is fermented in concrete tanks and French oak vats, with a minimally invasive extraction. Uncover with vertical press for gentle pressing.
Aged in barrels for 14 years. Wooden tanks and concrete tanks for the most part. French oak barrels and jars complete its aging in the cave.
Libre y Salvaje is an old winery located in the historic town of Almonacid de la Sierra, nestled in the Sierra de Algairén, Aragon. DOP Cariñena. This unique enclave is characterized by its caves, its mountain vineyards, its old dry land vines and its organic agriculture. For this winery there is only one rule, follow the law of nature.
Cariñena is the only region in the world that gives its name to a grape variety, Cariñena, due to its origin. The same name Cariñena was used to distinguish the Denomination of Origin in 1932, along with others, the oldest officially recognized in Spain.
Wine made with Garnacha 60% and Cariñena 40% grapes
Age of the vineyards between 35 and 60 years where the typical alluvial soils of the area predominate, very stony and with a first horizon of red clay and silt.
Hand harvested with bunch selection in the field
Take with pasta and poultry, beef and lamb.
