Special characteristics of the wine:
Made by the bleeding method, with a very short maceration of 4 hours. Alcoholic fermentation in stainless steel tanks, at a very low temperature, to retain all the aroma and flavors of the fruit in the wine.
In addition, stabilization has been carried out by natural means and minimum levels of sulfur have been used, to protect all the aromatic and color characteristics of the wine, obtaining an enveloping sensation in the mouth.
Contact of the wine with the fine lees for 3 months to avoid adding sulfur and prevent oxidation.
The wine is not stabilized, nor has it been filtered by membranes to maintain its freshness and mouthfeel.
Since 2006, our Pagos del Moncayo winery has been making wines from Garnacha and Syrah grapes from the Aibar family vineyards. Our philosophy is to make wines with the utmost respect for the environment and that clearly reflect their origin. To obtain the highest quality and honesty in our wines, we apply traditional methods both in the care of the vineyard and in the winemaking process in the cellar, using our own hands and feet and making the most of the natural resources that surround us. All these efforts have been recognized and certified by the European Union within the Eco-Prowine project.
It belongs to the DO Campo de Borja. Campo de Borja is located in the northwest of the province of Zaragoza, 60 km from the capital.
It is a transition area between the mountains of the Iberian System and the Ebro Valley.
It includes the Somontano del Moncayo and extends along the Valle del
Huecha river and the so-called Llanos de Plasencia.
Side. Campo de Borja treasures authentic jewels among its wines in which the “Garnacha” variety reaches all its splendor.
In the lower area, with altitudes between 350 and 450 metres, we find brown limestone soils and “garnachas” in both traditional goblet and trellis formation. It is the area of ??earliest maturation and includes the vineyards of Magallón, Pozuelo de Aragón... Its wines are warm, powerful and very aromatic.
The middle area is characterized by having the highest concentration and density of vineyards. It includes the vineyards located between 450 and 550 meters of altitude. The soils of the terraces of the river "La Huecha", a tributary of the Ebro and all gravelly and clay-ferrous soils are found. There are the vineyards of Ainzón, Borja, Fuendejalón.... in a relief of gentle slopes and good exposure to the sun. Its wines are very complex, intense, structured and meaty.
The upper area of ??the D.O, whose vineyards extend from 550 to 700 meters above sea level, corresponds to the foothills of Moncayo. They correspond to the vineyards located in the high areas of Ainzón and Fuendejalón, as well as the municipalities of Tabuenca, El Buste, Vera. Their wines are fine, subtle and elegant.
