Special characteristics of the wine:
The grapes, harvested manually, are destemmed and lightly crushed. The must ferments at 28ºC in stainless steel tanks. After malolactic fermentation, the wine remains in French oak barrels for a year, then refined in tank until bottling.
Balanced wine, with great potential for bottle aging.
The winery decided from its beginnings, in 1992, that the marriage of oenology and contemporary culture would be an essential feature of its character. It was a risky challenge from a business point of view and from an artistic perspective. But the triumph was undeniable and created a school. The concept finally prevailed: sublime ideas become evident once someone, ENATE, has had the courage to intuit them.
It was, in effect, creative will. In the same way that a winery without wine is unthinkable, ENATE assumed that art was the very essence of its identity. They are concepts that are born together and enrich each other. The human being is essentially a creator, in one way or another, and loves vital pleasures by nature. In 1992, ENATE formalized its commitment to bring both concepts together by contrasting the almost mathematical expertise of the winemaker with the unpredictability of the artist inspired by winemaking. Today, ENATE is a winery and museum. It is both a wine bar and an art gallery, and has forged its personality in the exquisiteness of both. Its barrels and walls summarize the great wines of Spain, inhabited by the genius of the great Spanish and international creators
This Somontano Designation of Origin is of cold winters and hot summers. In addition, in spring and autumn sudden changes in temperature are frequent.
The average annual temperature is 11 degrees Celsius.
These wines usually have a very good alcohol content, and a perfect acidity. They are usually fruity.
Variety: 100% Cabernet sauvignon.
Take with red meats, stews, aged cheeses, also with beans with fine clams and cuttlefish.
