Sweet wine making

It is made with must with a high content of sugars and with the process of a fortified wine. The wine can be white, from the varieties of Moscatel or Macabeo, red made with Garnacha, or rosé.
Initially, the grape harvest is delayed leaving the grape to mature in the vine. When the must is fermenting, and before all the sugar has been transformed into alcohol, alcohol is added in a proportion of 5 to 10% of the volume of the must, stopping the action of yeasts and leaving a certain amount of residual sugar fermented.
As quality liquor wine VLCPRD is regulated by the regulations of appellations of origin. The must must have a natural sugar richness of more than 250 g / l. The natural alcoholic strength by volume is at least 12% volume. With the addition of rectified alcohol of 96 ° or alcohol distilled from wine products of a graduation between 52% vol. and 86% vol., a minimum volumetric alcoholic strength of 15% vol. and maximum of 22% vol.
The name "natural sweet wine" leads to some confusion. It is not a natural wine, without special treatments in its elaboration, but of natural sweetness.

Types of sweet wine

We can basically find four types of sweet wine:
• Bortrytis wine: it is a wine that is obtained by making the fungus of the grapes grow by feeding on the sugar from the grapes. In this type of wines are the sweet wines of Bordeaux. Strong cheeses and salty dishes are recommended.
• Eswein: obtained from grapes that were frozen in the vineyard. Its name comes from the German, and means wine from the ice. Given the great concentration of game that is obtained from its grape, its productivity is low, hence its price is higher.
• Late harvest: as its name indicates are wines obtained from grapes that were on the vine, longer than normal. This allows the grapes to have more sugar, and therefore provide the wine with greater sweetness.
• Fortified wines: wines obtained by adding some alcoholic beverage, usually brandy, producing a high degree of sugars. The best known of this type are Jerez Olorosos and Moscatos.
In Spain sweet wines are classified among types depending on the grape they use:
Moscatel: to accompany with sweets
Malvasia: to take at the end of a meal
Pedro Ximénez: to taste with cheeses and chocolate
Its graduation in alcohol goes from the 8º to the 15º, also varying the shades of the colors from mahogany color, to the dark browns almost black.
These wines should always be taken at a temperature between 8 ° -10 ° C.
The glass that is used to take these wines is usually a small glass with wide body and narrow mouth, in order to be able to concentrate its aroma and its smell.
The use of a small glass requires us to take small amounts of this wine, which is already customary to taste it in short doses.
The glasses must be glass or glass, in order to enjoy all the characteristics offered by these wines, together with the appropriate temperature that we have already discussed, preferably 8ºC.
These wines are taken at the end of the meal normally with the desserts, since their consumption before eating, reduces the appetite of eating.
We advise you not to put the wine in the freezer, as sudden changes in temperature can spoil the wine. Therefore, it must be cooled in the refrigerator or in furniture specific to the wine, always with a little time in advance.

Best sweet wines

There are several regions and places in the world where sweet wines are produced. In Spain the sweet wines recommended by us are:
• Pedro Ximenez Duchess: dark mahogany color, very dense. Its aroma is soft, delicate, to raisins with notes of oak wood. In the mouth is very sweet, unctuous. velvety, soft. Memories of raisins.
• Moscatel Torrevellisca: 100% made with muscatel grapes. It has a yellow honey color, with a bright appearance. In the nose shows ample and complex reveals fruity and floral aromas, notes melosos and citrus. In the mouth it is soft, fresh, velvety, of fine touch and harmonious.
• Payment of Cirsus muscatel late harvest: its main characteristic is that the grapes with which this wine is made are not harvested until November. Intense golden color, clean and bright. In nose it presents aromas of honey, quince and peach result very fruity. In the mouth it is round and velvety, combining a delicate acidity.
• The house of the syrah sweet vine: it was made with grapes almost pasased (pass). It is a wine of great richness aromatic fruit like raisins, figs, prunes, contains varietal aromas: licorice, spices; as well as some balsamic that provides the wood. In the mouth it is broad, tasty, unctuous, but at the same time pleasant, without being cloying.
• Pedro Ximenez Romate: is a sweet wine made by Bodegas Sánchez Romate with Pedro Ximénez grape. The breeding takes place in the traditional system of criaderas and soleras, where it stays for 5 years. Its color is very dense mahogany. The aroma is soft, delicate, reminiscent of raisins. In the mouth it is very sweet, pleasant, and soft.
