Elaboration of Tombú
Harvested by hand bunch by bunch, fermented with its own natural yeast for 25 days at 16ºC in stainless steel tanks. Aged for six months on lees in deposit.

Located in the El Bierzo region (León), the winery is located in a privileged area surrounded by vineyards of exceptional quality.
Dominio de Tares combines tradition in cultivation and modernity in production to extract all the essence of the grape in optimal conditions.
Our purpose: to produce great red and white wines that express to the maximum the pure character of the Hoya Berciana.
The vineyard, of the autochthonous varieties Mencía and Godello, has been selected after an intense search for the best payments of the Bierzo denomination of origin, locating the most interesting soils and locations.
Designation of Origin of Tombú
It comes from the DO VT of Castilla y León. It is located in Tudela de Duero (Valladolid), in the heart of the Duero river valley.
The cultivation area is 70 hectares, with a yield per hectare of about 4,000 kilos.
Grape variety used in Tombú
Variety: 100% Prieto Picudo
The grapes are grown in the lower zone of the province of León, near Valladolid and Zamora. The soils are composed of a mixture of clays and limestone with river sediments, which allow the wines of the area to be elegant and structured, and also have good alcoholic content and low acidity.

It pairs perfectly with light and medium consistency dishes such as tapas and appetizers, white meats, paellas, pasta and spoon dishes.
