Preparation of Pazo de Seoane 

The selected grapes were deposited in small boxes of 20 kg that were transferred to the winery in refrigerated transport. After passing through the selection and destemming table, the best clusters were cooled to 10?C for later maceration for 10 hours. After this time they were gently pressed in an inert atmosphere thus avoiding oxidation. After decanting, the clean must fermented at 15?C. This wine did not carry out the malolactic fermentation due to the balance provided by the varieties. All processes, from the harvest to the final coupage, were carried out separately in each variety. The wine has been preserved until bottling with its fine lees that, through periodic bazuqueos, remain in suspension thus contributing complexity to the wine.

We were looking for excellence in white wines and we have found it. On the shores of the Atlantic, in the heart of Rías Baixas and nestled in a privileged microclimate, is our Galician winery Lagar de Cervera. There, in 1988, we began the task of forming the largest Albariño vineyard in this wine region, a grape of extraordinary quality with which we made the Lagar de Cervera monovarietal and the Viña Armenteira pomace.
Just 25 years of our arrival in Galician lands, we have completely remodeled our winery, providing it with the most modern and careful techniques that currently exist, allowing us to achieve our main objective: to obtain, harvest to harvest, the best Algariño Lagar de Cervera possible.

Denomination of Origin of Pazo de Seoane 

Rías Baixas is a designation of origin belonging to the region of Galicia. Specifically, it forms the coastal part of a part of Galicia, concerning the provinces of La Coruña, the province of Pontevedra to the Vigo estuary.
The Albariño grape variety has been cultivated in these lands for more than 1000 years, and the existence of Albariños wines has been known since the 12th century. Bo octante is from the mid-twentieth century, when this variety extends throughout the territory.
In the 80s, the Rias Baixas Regulatory Council and the Rias Baixas Designation of Origin were created.

Varieties: 62% Albariño grape from our O Rosal vineyards, 17% from Caiño, 11% from Loureiro and 10% from Treixadura.
