Elaboration of the Particular wine Garnacha Viñas Centenarias
The pre fermentative and post fermentative maceration is carried out for 30-35 days, with daily pumping over, controlling the temperature up to a maximum of 28ºC. After malolactic fermentation in the barrel, it is left to rest for two months (controlled temperature).

Aged in barrels, where it will remain a minimum of 12 months (controlled temperature). Finally, it is aged in the bottle where it is finely tuned for a minimum of 18 months.
The San Valero winery
It has been operating under this name since 1954. Initially the wines were sold in bulk, but in 1957 the first studies were carried out to install a bottling plant, which was inaugurated in 1962.
