Malacuera Roble wine making

Once in the winery, the following processes (destemming and crushing) are carried out at very low revolutions to respect the integrity of the grapes.
A pre-fermentation cryomaceration is carried out at very low temperatures, which prevent oxidation.
After alcoholic fermentation and appropriate maceration, it is devatted and proceeds to malolactic fermentation on the finest lees.
The wine is then transferred to Bordeaux barrels of French and American origin, where it remains for 4 months.

Our facilities are in the heart of the town of Castrillo de Duero, but the soul of our devil and its origin remains beneath a land full of tradition, in the underground cavities, the same ones that keep the secrets of the most mischievous and unruly wines in the area.
