Wine characteristics:

Winemaking Las Dolores Tinaja Garnacha

In Tinaja wines, the micro-oxygenation controlled by the porosity of the clay walls brings obvious benefits to the wine. Reduces its vegetal character, astringency and bitterness; Providing the wine with greater freshness, fruity expression, unctuousness and persistence.

The Agustín Cubero winery

The state-of-the-art facilities allow us to bottle in inert atmosphere conditions, so we can bottle the wine in the most aseptic conditions, with the maximum guarantees of hygiene and quality.
Bodegas Cubero has modern fermentation and production facilities, run by a group of oenologists.
When Agustín Cubero built the first winery in 1881 in a small town called Godojos, they never imagined that his family would carry on their tradition in the 21st century.
Today the Cubero family is the one that directly controls the entire winery so that the fifth generation continues to do so in the same way as their ancestors.

The Designation of Origin Calatayud

The D.O.P. Calatayud is located in the westernmost part of the province of Zaragoza, 87 kilometers from Zaragoza and only 1 hour from Madrid by AVE.
The geographical area of ??the D.O.P. Calatayud is constituted by the following municipal terms:
The D.O.P. Calatayud is located within the Calatayud Community Region belonging to the province of Zaragoza and bordering the provinces of Soria, Guadalajara and Teruel.
From a geomorphological point of view, the Calatayud basin is a miniature reproduction of the Ebro basin with three different units: the outer mountains, the interior of the pit and the foothills.
It is an area of ??complicated orography, located in the foothills of the Moncayo and characterized by a complex hydrographic network formed by various tributaries of the Ebro River, such as the Jalón, Jiloca and other smaller ones. The vineyards descend the slopes of the mountains, with altitudes that range between 550 and 1,040 meters.
The terrain is undulating, with most of the vineyard settling on stony, loose soils, very poor in nutrients and with a high proportion of limestone. They have good permeability and are healthy.
