Elaboration of the Freixenet Elyssia Pinot Noir Rosado cava
The variety used to make the base wine for this wine cellar is Pinot Noir. The harvest is mechanical and is done at night to preserve the sensory characteristics of the grape. Subsequently, a maceration is performed in pneumatic press for 5-6 hours, and a static racking to clarify the must before fermentation in stainless steel tanks at a temperature between 16-18ºC with selected yeasts of their own.

Belonging to sparkling cava wines. The largest production of these sparkling wines is found in Alto Pendes, but we can also find large cavas in the Aragon region.
Sparkling cava wines are made in Spain. The region best known for making cavas is Sant Sadurní d´Anoia, within the Alto Penedés region. From this region most of the national production of cava is obtained.

The grapes come from the payment of the Mas Bernich estate, located in the municipality of Masquefa in the Alt Penedés and give it elegance and sensations. The Mas Bernich estate consists of 92 hectares of which 15 are from Pinot Noir, planted on trellis with the Royat-Doble driving system. Its soil is sandy-clayey, with an average annual rainfall of 550 l / m2.
