Elaboration of Can Sumoi Perfum
Once the grapes have entered the winery, they are skidded and gently pressed to begin a first fermentation in stainless steel tanks at around 18ºC and with indigenous yeasts, a process that will last about 16 days. After the first fermentation, the malolactic fermentation starts spontaneously.
